The Burn Variation is 1.e4 e6 2.d4 d5 3.Nc3 Nf6 4.Bg5 dxe4, a line of the Classical Variation of the French Defense named after Amos Burn. Play Black's moves of the line from memory — 1. e4 e6 2. d4 d5 3. Nc3 Nf6 4. Bg5 dxe4 — and the trainer plays White's replies; "Play the other side" turns it around.

"Drill all" adds the 3 named lines that continue it, such as French Defense: Classical Variation, French Defense: Classical Variation, Burn Variation, Main Line, French Defense: Classical Variation, Burn Variation, Morozevich Line.
